Tropical Kale Salad

Kale, mango, cabbage and peppers combine with a coconut curry dressing for a salad as tasty as it is beautiful. This will be a spring and summer favorite for years to come!

3 cups kale, green (washed and roughly chopped )
1 mango (large, peeled and sliced)
1⁄2 cup cabbage, red (shredded)
1⁄2 cup snow peas (sub snap, chopped)
1⁄4 cup mint, fresh (roughly chopped)
1 cup cilantro, fresh (roughly chopped)
1⁄2 bell pepper, red (medium, cored, seeded, and julienned)
1 carrot (large, peeled, and julienned)
1⁄4 cup macadamia nuts
1 tablespoon sesame seeds

Coconut Curry Lime Dressing

1 1⁄2 cups coconut milk
1 1⁄2 tablespoons curry paste, red
1⁄4 cup cilantro, fresh
1⁄4 cup mint, fresh
1⁄4 teaspoon salt
1⁄2 cup macadamia nuts
3 tablespoons lime juice
2 green onion (roughly chopped)
  water (as needed to thin)


  1. Make the dressing: Add all ingredients to a blender or food processor and blend until smooth.
  2. In a large bowl toss the dressing with salad ingredients and enjoy!
