Winter Cheer Parsnip Salad

This recipe was submitted in our We ♥ Local Parsnips Recipe Contest by S'ra DeSantis. S'ra says, "Do you have the winter blues? Parsnips smell like soil and have an earthy flavor. They are capable of invoking thoughts of gardening and getting digging in the soil.  This salad will make you remember spring is right around the corner."  We couldn't agree more!

8 Side Servings

Ingredients

2 parsnip (large)
3 carrot (large)
1 bunch cilantro
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
2 teaspoons tamari

Instructions

Peel and shred the parsnips and carrots.  Chop cilantro into small peices (but not too fine).  Combine parsnips, carrots, and cilantro in a bowl and stir. 

In a small mason jar, combine the liquid ingredients and shake vigorously.  Pour over salad immediately so that the oil does not settle out.

Toss the salad and eat!
