Turkey Burgers with Herbed Yogurt Sauce

These burgers are satisfying and full of flavor.

Ingredients

2 tablespoons olive oil
2 teaspoons lemon juice
3 pounds turkey, ground
1 1⁄2 cups onion, red
3⁄4 cup parsley, fresh
1⁄4 teaspoon tarragon, fresh
2 teaspoons scallion
2 cups yogurt, plain
1⁄2 teaspoon basil, dried
6 tablespoons cheese, goat

Instructions

Preheat the oven to 350 degrees.  In a large mixing bowl, using your hands, mix together the turkey, onion, parsley and 6 tablespoons of yogurt.  Make the mixture into 12 patties.  Place the crumbled goat cheese right in the center on the top of 6 patties.  Then place the other patties on top to create 6 double-thick turkey burgers.  Heat the oil in a large cast iron skillet over medium-high heat.  Brown the patties quickly on both sides and then transfer the skillet to the oven.  Bake for about 15 minutes.  When you press down on the burger, the juice should run clear.
Prepare the Herbed Yogurt Sauce by combining 2 cups of yogurt with tarragon, scallions, basil and lemon juice in a mixing bowl.  Stir until well mixed and serve with the turkey burgers.

Try using local items such as Misty Knoll ground turkey, Butterworks Farm yogurt and Blue Ledge Farm goat cheese.
