Shred the Brussels sprouts and toss in a bowl with walnuts and grated cheese. In a small jar, combine the olive oil, apple cider vinegar, miso, and mustard with a sprinkle of salt and pepper. Cover tightly with a lid and shake. Pour dressing over shredded salad and stir.
