Sautéed Morels with Ramps and Goat Cheese


Here's a great way to utilize springtime morels. Substitute in onions or leeks if ramps are not available.

3 tablespoons olive oil
2 morels
4 potato, fingerling
1 teaspoon thyme, dried
6 ramps
  cheese, goat
  black pepper


Slice the morels and potatoes and sauté in olive with the thyme, salt and pepper until the potatoes and mushrooms soft. Add the chopped ramps and sauté until they are slightly wilted. Serve over cooked quinoa (brown rice or couscous would also be fine). Top with crumbled goat cheese.
