Red Kale and Apple Salad

Ingredients

1 apple (skin on, cut into bite-sized pieces )
1⁄4 cup butter (or 1/4 cup sunflower or coconut oil)
1 bunch kale, red (stems removed, leaves chopped)
2 teaspoons maple syrup
2 tablespoons tamari
  pinch salt

Instructions

Slice your apple of choice, leaving the skins on, into bite-sized pieces and sauté in butter or oil with a pinch of salt, until barely soft.  Be generous with the butter/oil, because it will be tossed with the kale later.

Remove the stems from a bunch of red kale and chop. Steam for 3-5 minutes.

Transfer steamed kale to a large bowl and pour sautéed apples on top.

Drizzle maple syrup and tamari on top.  Spices can be added, depending on taste, like powdered ginger, cloves, allspice, etc.

Toss altogether until all ingredients are well-coated.  Serve!
