Pumpkin Spice Energy Bites

Enjoy these healthy, no-bake energy bites that have all of your favorite fall flavors. You can find the pumpkin pie spice in our Bulk department.

1 cup medjool dates (pitted)
3⁄4 cup oats, whole
2 tablespoons almond butter
1⁄4 cup pecans (chopped)
1⁄2 cup pumpkin pureé
1 tablespoon maple syrup
2 1⁄4 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1⁄8 teaspoon salt, kosher
1⁄4 cup chocolate chips (optional)
1⁄4 cup coconut


Add all ingredients to a food processor. Pulse to combine. Taste the mixture and add more pumpkin pie spice or maple syrup if desired. Transfer the mixture to a bowl, cover and refrigerate for at least 20 minutes. With a tablespoon or cookie scoop, scoop the mixture into your hand and roll into small balls. If desired, roll in optional chocolate chips or coconut. Keep in an airtight container in the fridge for up to 2 weeks.
