Pina Colada Mocktail

Ingredients
1 teaspoon honey (substiture agave if desired)
1 tablespoon coconut, shredded unsweetened
1⁄3 cup juice, pineapple
1⁄2 cup cream of coconut
3 drops coconut extract
1⁄2 teaspoon vanilla extract
1 pinch salt
ice
Instructions
Rim two rocks glasses with honey and then with the shredded coconut. Combine all other ingredients with ice in a cocktail shaker and shake thoroughly, then add fresh ice to the glasses, pour over, and serve.
