Moroccan Lemon Vegetable Salad
Delicious, refreshing, and healthy summer time salad.
1⁄2 cabbage, red (thickly chopped)
2 carrot (peeled)
1 cucumber (large)
3 celery (stalk, chopped)
2 lemon (juiced)
1 tablespoon olive oil
salt (to taste)
black pepper, ground (to taste)
In a large bowl, mix chopped cabbage, carrots, cucumber, and celery. Add lemon juice, olive oil, salt and pepper.
Mix well, cover, and refirgerate for an hour or several days. Keeps in the fridge as a tasty, healthy salad all week long.
