This salad can be served right away or can sit for an hour to help the flavors meld. Try purple carrots for a colorful presentation.

Moroccan Grated Beet Salad

1 cup beet (peeled and grated)
2 cups carrot (grated)
1⁄2 cup raisins
1⁄2 teaspoon paprika
1⁄4 teaspoon cumin, ground (ground)
1⁄4 teaspoon cinnamon, ground
  salt (to taste)
  cayenne pepper (to desired taste)
2 tablespoons lemon juice
2 tablespoons mint, fresh (minced)


Grate the beets and carrots, then combine in a bowl with the raisins. In a separate bowl, combine the spices and lemon juice, stirring until smooth. Slowly pour the dressing over the beets and carrots, folding the mixture to evenly distribute. Taste and adjust seasoning. Garnish with whole mint leaf.
