Mojito Watermelon Salad

Description

A refreshing salad, you can add cucumber, feta cheese, papaya, and/or jicama to customize.

Ingredients

2 cups
watermelon (seeded, cut into 3/4 inch cubes)
2  
tomato (1 each red and yellow, preferably heirloom, cored and chopped)
1/4 cup
lime juice
2 tablespoons
tequila (optional)
1 tablespoon
white wine vinegar
2 teaspoons
agave nectar
3 tablespoons
olive oil
2 tablespoons
mint, fresh (minced)
1 pinch
salt
1 pinch
black pepper, ground

Instructions

Place the watermelon and tomato pieces on a paper towel to absorb excess moisture. In a large bowl, whisk together the lime juice, tequila, agave nectar, vinegar, mint, salt, pepper and olive oil. Add the watermelon and tomatoes, toss well to coat and serve immediately.
