Cucumber, Peach, and Blackberry Salad

This fresh, light salad highlights summer produce with a unique combination of flavors.

1 shallot (finely chopped)
2 tablespoons vinegar, white wine
3 tablespoons olive oil, extra virgin
  salt and pepper (to taste)


3 peach (sliced)
1 cucumber, English (sliced)
1⁄2 pint blackberries
2 tablespoons mint, fresh (finely chopped)
  cheese, feta (to garnish)


For dressing:

  1. Combine chopped shallot and white wine vinegar in a small bowl and set aside for 5 minutes.
  2. After 5 minutes, whisk in olive oil and salt and pepper to taste.

For salad:

  1. Combine sliced peaches, sliced cucumber, and blackberries in a large bowl. Pour dressing over, add chopped mint leaves, and stir gently to coat.
  2. Taste for seasoning, then serve topped with crumbled feta cheese if desired.
