Description
Apple season is upon us! Try out this yummy kale salad with local apples. McIntosh, Honeycrisp, and Empire varieties all work great in this salad. The crispy quinoa adds a fun, crunchy bite.
Ingredients
1 bunch
kale, lacinato (chopped) 1/2 cup
quinoa (cooked) 1
apple (sliced) 1/4 cup
walnuts (roughly chopped) 1/4 cup
almond milk (unsweetened) 1/4 cup
tahini 1 tablespoon
lemon juice 1 tablespoon
Mustard, Dijon 1 tablespoon
apple cider vinegar 1/2 teaspoon
salt 1/4 teaspoon
black pepperInstructions
Preheat oven to 500° Fahrenheit. Spread cooked quinoa in a thin layer on a sheet pan. Place in oven and cook 5-7 minutes or until quinoa is crispy. Remove from oven and set aside to cool. To make the dressing, add all ingredients in a large mason jar and shake until well combined. Set aside. In a large salad bowl, add kale, apple slices, walnuts and crispy quinoa. Drizzle the creamy tahini dressing on top and toss to combine. Enjoy!
