2 pounds kale (chopped)
1 onion (diced)
1 tablespoon sunflower oil
2 tablespoons pumpkin seeds
1 cup flaxseed oil
1 tablespoon garlic (peeled and minced)
2 tablespoons ginger, fresh (peeled and grated)
1⁄4 cup tamari
1⁄4 cup nutritional yeast
1⁄4 cup lemon juice
1 tablespoon Mustard, Dijon


To make Vinaigrette: Combine ingredients in a medium bowl. Stir to combine. Set aside.

In large sauté pan, heat sunflower oil over high heat. Add kale and onion to pan and sauté until kale wilts.

Add everyday vinaigrette to sauté pan and continue to cook 1 minute. Coat the kale and warm the vinaigrette through. Garnish with pumpkin seeds and enjoy.
