Ingredients

1 tablespoon sunflower oil
3 ounces onion (diced)
1 teaspoon garlic (minced)
1 teaspoon chili powder
1⁄4 teaspoon cumin, ground
3⁄4 cup tomato (canned, crushed)
1⁄3 cup chili, green (diced)
1 chipotle pepper in adobo sauce
1 pound chicken, ground
1 tablespoon sunflower oil
1 tablespoon garlic (minced)
20 ounces beans, pinto (drained)
1 tablespoon chili powder
1⁄3 cup tomato paste
  salt (to taste)
  pepper (to taste)
12 tortilla, corn (6 inch size )
4 ounces corn, frozen
1⁄2 sour cream
4 ounces cheese, cheddar (shredded)
4 ounces cheese, monterey jack (shredded)

Instructions

For the sauce, heat the oil in a large skillet. Add onion and garlic; sweat for 3 minutes.  Add the chili powder and cumin; stir in. Add canned tomatoes and green chilis. Puree or mash chipotle pepper and add to the sauce. Simmer sauce for 30 minutes and set aside and allow to cool.

For the casserole pre-heat oven to 350°F. Heat oil in a large skillet and brown chicken and garlic in oil, add pinto beans, chili powder and tomato paste. Heat through to cook chicken and then remove from heat and set aside.

In a 2-inch deep 12x18 inch baking dish, ladle about ¼ cup of the sauce. Place 4 tortillas on top of the sauce in the dish. Put about 2 cups of chicken and beans on the tortillas, topping with half of the remaining sauce, half of the sour cream, half of the corn and 1/3 of each cheese. Top with 4 more tortillas and repeat previous step.

Top with 4 more tortillas and cover with remaining cheeses.

Cover the dish with foil and bake until hot in the center. Remove foil and return to oven to brown under broiler. 

Once everything is heated through, serve and enjoy!
