Broccoli Rabe Over Pasta

This traditional Italian dish comes together quickly and highlights a spring favorite, broccoli rabe. If available, try using spring garlic for an extra fresh flavor, just cook for a shorter amount of time than regular garlic.

Ingredients

1 pound broccoli rabe
1 pound pasta
1⁄2 cup olive oil
3 cloves garlic
1⁄2 teaspoon red pepper flakes
  salt
  cheese, parmesan

Instructions

In a large pot, bring salted water to a boil. Add pasta and cook. Five minutes before pasta is finished, add broccoli rabe to the pot and stir to incorporate. Continue cooking until both are al dente, then drain in a colander. In the empty large pot or another small pot, heat the olive oil, garlic, salt and optional red pepper flakes medium heat. Stir for 3 minutes or until garlic is very lightly browned. In a serving bowl, add garlicky olive oil to your broccoli rabe and pasta mixture until evenly coated. Serve with grated parmesan cheese.
