Barley is a grain that is chewy and has a nice nutty flavor. It makes for a tasty salad!
Bring 4 cups of salted water to a boil and add barley. Reduce heat, cover, and simmer for 20-25 minutes. Strain the barley and set aside.
In a skillet, heat oil over medium heat. Add leeks, carrots, and parsnips with salt and pepper and cook until they are tender. Add the lemon zest and cook for 3 more minutes and remove from heat. Add the chopped parsley and cooked barley and mix together.
