Ancient Grains & Turkey Meatballs

Ingredients

1 1⁄2 cups farro (cooked)
1 pound turkey, ground
1 egg
1 teaspoon rosemary, dried
1⁄2 teaspoon garlic powder
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper

Instructions

To cook the farro, add 1 cup of dry farro to 2 ½ cups water. Add 1 Tbsp olive oil and a dash of salt. Bring to a boil. Reduce heat and simmer for 20 minutes. Strain farro of any excess water. Set aside to cool before preparing meatballs (or the heat will begin to cook the egg).

Preheat oven to 450 degrees F. Combine all ingredients in a large bowl. Gently form mixture into 1 Tbsp balls and place them on a large baking sheet. Bake until cooked through, about 18-22 minutes. Make sure to flip meatballs half way through cooking so they brown evenly.

When ready to serve, simmer for 10 minutes in sauce of choice.
