Watermelon Salad

Jump into summer with this refreshing watermelon salad. Watermelon and feta are the perfect combination of salty and sweet. Add dried chamomile leaves to bring out the mint for a charming finish.

1⁄2 watermelon (seedless)
1⁄4 cup lemon juice (fresh)
1⁄2 cup mint (finely & seperated)
1⁄2 cup cheese, feta
1⁄4 teaspoon sea salt
2 tablespoons chamomile flowers, dried (optional)


Slice ½ of a seedless watermelon into 1” cubes after removing the rind. In a large bowl, combine watermelon, lemon juice, mint (minus 1 Tbsp for serving) and sea salt. Crumble feta over the top and toss to combine. Finish with chamomile leaves and remaining mint.
