Spiced Pear Cake

Vermont has many local varieties of pears. Try this recipe using local Asian pear varieties!

1 9-inch Cake or 16 cupcakes

Ingredients

1⁄2 cup butter (melted)
2 cups flour, all-purpose
2 teaspoons baking soda
1⁄2 teaspoon baking powder
2 teaspoons cinnamon, ground
1⁄2 teaspoon ginger, ground
1⁄2 teaspoon nutmeg, ground
3⁄4 teaspoon salt
2 cups brown sugar (packed light)
2 egg (room temperature)
4 pear (2 grated and 2 diced)

Instructions

Preheat oven to 350 degrees F. Line baking pan with parchment paper or cupcake tin with liners.

Remove skins from pears. Grate two of the pears and dice the other two for variations in texture.

In a medium bowl, mix together dry ingredients. In a larger bowl, whisk together the melted butter, brown sugar, eggs, and pears until all the ingredients are well combined. Add the wet mixture to the dry, and fold to incorporate. Pour batter into pan of choice.

Bake for 35-40 minutes of the round cake or for 20-25 minutes for the cupcakes. A toothpick inserted into the cake should come out clean. Let cool for 10 minutes before removing from pan.
