Rotisserie Chicken Burrito Bowls

Ingredients

1 tablespoon vegetable oil
1⁄2 cup salsa
1 1⁄2 cups chicken, cooked (shredded from rotisserie chicken)
1 can beans, black (drained and rinsed)
1 cup rice, white (uncooked)
2 cups chicken broth
1⁄4 teaspoon cayenne (to taste)
1 teaspoon cumin

Instructions

  1. Add oil to a large pot and heat over medium high. Add uncooked rice and toast until the grains are slightly golden.
  2. Add cayenne and cumin to the pan and toast for 30 seconds. Add salsa and broth, then cover, reduce to a simmer, and cook until rice is done, about 12-15 minutes.
  3. When rice is done, mix shredded cooked chicken into rice, then portion into bowls and top with all your favorite toppings!
