This is a tart and sweet drink with a nice herb undertone.
Peel off thick strips of zest from 1 lemon. Juice the lemons and oranges into a measuring cup and top off with water so you have 1 cup of liquid. Combine zest, juice, rosemary, sugar, and honey in a saucepan and heat over medium heat. Bring to a boil and cook for 1 minute, stirring to dissolve the sugar. Remove from heat and let sit 10 minutes. Strain out solids and let syrup cool.
To serve, fill an 8 ounce cup halfway with ice cubes and add 2-3 Tbsp syrup. Fill rest of the way with club soda and stir. Garnish with extra rosemary sprigs and lemon slices, if desired.
