Quinoa Crispy Treats

High in protein and fiber, these crunchy, quinoa crispy treats are the perfect dessert to kick off the New Year!

6 cups quinoa (cooked)
1⁄2 cup honey
1⁄2 cup peanut butter
1 teaspoon cinnamon
1⁄2 teaspoon vanilla
1 cup chocolate chips, dark
1 tablespoon coconut oil
1⁄4 teaspoon sea salt


Preheat the oven to 350 degrees F. On one large sheet pan or two medium sheet pans, spread cooked quinoa in a thin layer. Roast in the oven for 15-25 minutes, checking every 10 minutes or so to make sure the quinoa is not burning. Remove from oven and let cool. In a small saucepan, combine honey, peanut butter, cinnamon and vanilla. Stir on low heat until smooth and mixture has melted together, this should take less than 2 minutes. Remove from heat.

In a large bowl, add quinoa crispies and the honey peanut butter mixture. Stir to combine. Line an 8’’x8’’ baking dish with parchment paper and add the mixture to the bottom, pressing down the edges firmly into the baking dish.

In a double boiler, melt chocolate and coconut oil. Pour melted chocolate into the baking dish over the quinoa mixture and spread evenly. Sprinkle sea salt evenly over the top. Place in refrigerator for 30 minutes for the chocolate to solidify. Slice into squares and enjoy!
