Paleo Coconut Macaroons

This recipe was taught in a Paleo foods cooking class, a nutrition plan based around the grass-fed meats, eggs, vegetables, fruits, nuts and seeds available to our hunter-gatherer ancestors before the advent of grain agriculture.

Paleo Coconut Macaroons

Ingredients

1 cup coconut butter
2⁄3 cup maple syrup
1 teaspoon sea salt
2 cups coconut, unsweetened (shredded)
1⁄2 cup chocolate chips

Instructions

Begin by warming your coconut butter in either a hot water bath or the microwave (WARNING: If using a microwave, watch very carefully and only heat for 10 seconds at a time, removing to stir and check the butter each time).

Once the coconut butter has fully melted, put it in a medium mixing bowl and mix together with syrup and salt until well combined.

Fold in the coconut and chocolate chips.

Use a rounded table spoon to form 1-inch balls and press flat onto a baking sheet.

Bake at 300 degrees for 25 minutes, until edges brown slightly; allow to cool for 10 minutes before removing from tray and eating.
