This is a special treat with the added benefit of being high in protein. Use your favorite type of nut.
Preheat oven to 300°. Melt butter with maple syrup. Add coconut, ½ tsp. salt and cinnamon and toss with nuts.
In a clean bowl, beat egg white with a pinch of salt until soft peaks form. Fold in nuts.
Spread on parchment-lined baking sheet and bake for about 30 minutes, turning occasionally, until dry and toasted.
