Mango and Bean Salad

  Ingredients
15 ounces beans, black
            
                                          15 ounces beans, navy
            
                                          3⁄4 cup corn
            
                                          1 tablespoon brown sugar
            
                                          1 mango
            
                                          1⁄2 pepper, jalapeño
            
                                          1⁄4 bunch cilantro
            
                                          1⁄2 avocado
            
                                          1⁄4 cup onion, red
            
                                          1 tablespoon olive oil
            
                                          2 1⁄2 tablespoons lime juice
            
                                          1 teaspoon lime zest
            
                                          1 teaspoon garlic
            
                                            salt
            
                                          1⁄2 bell pepper, red
            
            Instructions
Marinate the sliced red onion in the lime juice and lime zest for 30 minutes. Meanwhile, caramelize the corn by heating a saute pan over medium-high heat with 1 tablespoon olive or canola oil. Add the corn and the sugar and saute until the corn is golden brown.  Remove from heat and let cool. Combine all of the salad ingredients with the marinated onions and cooled corn.  Toss gently and add salt to taste.
