Lime & Peanut Coleslaw

1 1⁄2 cups peanuts
1⁄2 cabbage, green
1 pint tomato, cherry
1 pepper, jalapeño
3⁄4 cup cilantro (chopped)
1⁄4 cup lime juice
2 tablespoons olive oil
1⁄4 teaspoon salt


Shred the cabbage into thin slices. Combine the cabbage, tomatoes, jalapeno, and cilantro in a bowl. Toss in the lime juice, olive oil, and salt. Just before serving fold in the peanuts. Taste and adjust the flavor with more salt if needed.
