Homemade Pizza Dough

Recipe adapted from Adele Dienno and Norah Cunha.

This pizza dough is great for pizza in the oven or flatbreads on the grill. Make sure to plan ahead though; it needs some time to proof.

Ingredients

2⁄3 cup water (warm)
1 1⁄2 teaspoons yeast, active dry
2 cups flour
1⁄4 teaspoon salt
1⁄2 teaspoon sugar

Instructions

Measure water into a mixing bowl. Sprinkle yeast on top and allow to dissolve.

Meanwhile, mix together flour, salt, and sugar. Add to water/yeast mixture until it is too thick to stir. Add a little more water if necessary to incorporate all the flour.

Turn dough onto a flat surface. Add enough flour until the dough can be easily kneaded. Form the dough into a ball and let rise in a slightly oiled bowl with a towel covering the top. Let the dough rise for 2-3 hours.

When ready to cook, roll out with a floured rolling pin. 

To cook on the grill, keep the dough as cold as possible until you are ready to use it. Lightly oil the grill grate and cook over medium low for 30 seconds on each side. Add toppings when cooking the second side.

To cook in the oven, lightly dust a pizza stone or other baking tray with cornmeal. Brush the rolled dough with olive oil. Cook at 400F for 5-10 minutes. Add toppings and cook for 10-15 minutes more.
