Yield

6 Cups

Ingredients

1 cup salt, coarse
1 cup salt, fine
4 cups herbs, fresh (like rosemary, thyme, oregano, sage, lavender, or marjoram)

Instructions

Rinse and dry fresh herbs. Let sit for several hours so there is no moisture on the herbs. If you have a mortar and pestle, grind the fresh herbs with the coarse salt, or simply chop the herbs and salt together on a cutting board with a large knife. Add the fine salt, grind a little more. If you would like to extend the shelf life, spread salt/herb mixture on a baking sheet and let sit for additional drying time. Shelf life with fresh herbs is at least a year, assuming no moisture gets into the salts.
