Ham, Gruyère & Apple Galettes

Ingredients

2 pie crust (premade, thawed if frozen)
1 dash flour (for dusting)
1⁄4 cup apple butter
2 tablespoons mustard, whole grain
2 apple, honeycrisp (sliced thinly)
3 slices ham, deli (sliced thinly)
6 tablespoons cheese, Tarentaise (shredded)
3 teaspoons thyme, fresh (chopped)
1 dash black pepper
1 egg
1 tablespoon water

Instructions

1. Preheat oven to 400˚F and spray a baking sheet with nonstick spray. Roll each pie crust out on a floured surface, cutting two 6-inch rounds from each and re-rolling the scraps to cut one more. You should end up with a total of 6 pieces, 3 from each crust. Lay out on the greased sheet, using a second sheet if they don’t fit.
2. Mix apple butter and mustard and spread about a tablespoon on each piece, stopping one inch from the edge. Top with apple and ham slices, then sprinkle with thyme, pepper, and shredded cheese. Pleat edges of the dough up over the edge of the filling, leaving the middle open.
3. Whisk egg and water and brush lightly onto the edges of the dough. Bake in preheated oven until deep golden brown and crispy, 30-40 minutes. Let cool slightly and serve!
