Grilled Local Pork Belly & Sesame Ginger BBQ Marinade

Serve this local grilled pork with sautéed or grilled vegetables.

Ingredients

1 pound pork belly (local, sliced into 1/8-inch pieces)
1⁄4 onion, yellow (finely diced)
2 ginger, fresh (inch pieces)
2 scallion (minced)
1⁄2 cup soy sauce
1⁄4 cup sesame oil
4 tablespoons honey
1⁄4 cup rice wine vinegar
2 tablespoons chili flakes (dried)
3 tablespoons ketchup (or tomato paste)
2 tablespoons black pepper, ground
  white pepper (optional)

Instructions

To make the marinade, combine all of the ingredients, except the pork, in a bowl and whisk to combine.  Save some marinade in a separate container to brush pork belly with after cooking.

Lay raw pork belly strips in glass dish or bowl, cover with marinade, and soak in marinade overnight, or at least one hour.

Heat grill to high.

Remove pork from soaking marinade and discard liquid.  Grill pork belly strips for 2 minutes. Remove pork from grill and brush with the extra marinade.
