Ingredients

2 cups flour, whole wheat pastry
2 cups flour, all-purpose
1 tablespoon ginger, ground
2 teaspoons cinnamon, ground
1⁄2 teaspoon nutmeg, ground
1⁄2 teaspoon cloves, ground
1 teaspoon salt
1⁄2 teaspoon baking soda
1⁄2 pound butter
2⁄3 cup sugar, brown
2 ounces egg
2⁄3 cup molasses

Instructions

Combine dry ingredients (flour, spices, salt, and baking soda) in a large bowl.

Beat the butter and brown sugar together in a second bowl. Add eggs one at a time and molasses. Beat in the flour mixture. U

se your hands or a wooden spoon to form the dough into one or more large balls. Cover and refrigerate for at least a 1/2 hour.

Preheat oven to 350°F. On a floured surface, roll dough out 1/4” thick and cut into favorite shapes. Reroll any scraps. Bake for 10-15 minutes or until lightly browned.

Notes

Icing (optional)

Powdered sugar mixed with a couple of drops of water or lemon juice works pretty well.
