Flourless Almond Energy Cookies

These cookies have a great almond flavor and stick to your ribs. They were taught in a City Market class on healthy snacks for active lifestyles.

1 cup almond butter
1⁄3 cup maple syrup
1⁄3 cup brown sugar
1 egg
1 teaspoon baking soda
1⁄2 cup almonds (slivered)
1⁄2 cup chocolate chips
1 teaspoon vanilla extract
1⁄2 teaspoon salt
1 cup oats, rolled


Preheat oven to 350F.

Mix together almond butter, maple syrup, and brown sugar until smooth; add egg. Stir in remaining ingredients. Roll into small 1’’ balls and place on a greased baking sheet. Bake 12-15 minutes. Remove from oven and let cool.
