Cookie Truffles

This is a super simple, yet delectable, dessert.  Try substituting Oreos for other types of sandwich cookies, like Newman Os or Nutter Butters.

Oreo Balls

Ingredients

1 package Oreos (or other sandwich type cookies)
8 ounces cream cheese (room temperature)
24 ounces chocolate chips, semisweet

Instructions

Put the cream cheese in a bowl.  Separate the oreo filling from the cookies and put the filling in the bowl with the cream cheese and the cookies in a food processor or a ziploc plastic bag.  Mix/cream together the filling the cream cheese. Crumble the cookies into a mostly fine dust (if using a bag, rolling a rolling pin over the bag works well).  Mix in the oreo dust with the cream mixture so it's evenly distributed.  Refrigerate 20-30 minutes.  Line a baking sheet with wax paper.  Form the oreo mixture into the size balls you want (Tbsp size or so works well) and place on baking sheet.  Freeze the balls for about 1 hour.  Melt the chocolate on low in a pan on the stove.  I usually melt one bag at a time to try to estimate the amount of chocolate I will actually need to use.  Roll the oreo balls in the melted chocolate to fully cover.  Place balls back on baking sheet and allow chocolate to harden at room temp.  Then freeze them for a few hours to fully set the chocolate.  Keep refrigerated.
