Coconut Cream Frosting (Vegan)
For a delicious alternative to buttercream, make this coconut cream treat! Fear not, the coconut flavor is very mild and will work to accompany almost any recipe.
Chill cans of coconut cream for a few hours or overnight. This helps the liquid and the solid cream separate and makes it much easier to use. When ready to make frosting, open the cans of coconut cream carefully and scoop out the solid cream. There should be about 20-30% liquid left behind.
Open the vanilla pod with a knife and scrape out the beans into the hardened coconut cream. Carefully whisk the sugar into the mixture. Whip until smooth and slightly airy. Dollop on top of fruit, cake, or pastry and enjoy!
