City Market's Thai Chicken Salad

Ingredients

2 pounds chicken breasts (skinless)
  salt (to taste)
  black pepper (to taste)
1 tablespoon chili powder
1⁄2 cup cilantro, fresh (chopped)
1⁄2 cup mint, fresh (chopped)
1⁄4 cup onion, red (diced)
1⁄4 cup scallions (sliced thinly)
1 tablespoon sugar
3⁄4 cup mayonnaise

Instructions

1. Preheat oven to 350°F.

2. Lay out chicken on a lightly oiled sheet tray. Season with chili powder, salt & pepper.

3. Bake for 25-30 minutes until internal temperature at center of breast is 165°F.

4. Set aside until cool enough to handle and then dice into small cubes.

5. Combine chicken and all remaining ingredients in a large bowl. Adjust seasonings to taste.
