City Market's Sausage & Sage Stuffing

Ingredients

8 tablespoons butter, unsalted
4 celery (ribs, diced small)
2 onion, yellow (diced small)
1 1⁄2 pounds sausage (City Market Holiday variety, casing removed)
3 tablespoons sage, fresh (leaves, chiffonade)
1 tablespoon thyme, fresh (leaves, chopped)
11 ounces stuffing (mix, like City Market's housemade mix)
1 1⁄2 cups stock, turkey (or chicken. or as needed to soften the bread)
1⁄4 cup heavy cream
  salt (to taste)
  black pepper, ground (to taste)

Instructions

Preheat oven to 350 degrees F.  Butter a 9 by 11 inch baking dish and set aside. In a large skillet over medium heat, melt 6 tablespoons butter. Add the celery and onions, cook until almost translucent. Season with a pinch of salt and pepper. Add sausage, stirring frequently to brown on all sides about 6 minutes. Stir in the sage thyme and cubed bread. Combine the stock and heavy cream. Season lightly with salt and pepper. Add the liquid, ½ cup at a time, stirring gently to combine. You may need to add a bit more stock depending on the bread that you use, to achieve the desired consistency.

Arrange the stuffing in the baking dish, cut the remaining butter into small pieces and put on top of the dressing. Bake for 30 to 45 minutes. If the top starts to brown, cover with aluminum foil.
