City Market's Cranberry, Apple & Sausage Stuffing

Ingredients

8 tablespoons butter, unsalted
2 onion, yellow (diced small)
8 celery (ribs, diced small)
4 leek (coarsely chopped)
4 apple (peeled cored and chopped)
1 pound sausage (City Market Holiday variety, casing removed)
6 teaspoons seasoning, poultry
2 teaspoons rosemary, fresh (chopped)
2 teaspoons parsley, fresh (leaves, chopped)
2 cups cranberries, dried
11 ounces stuffing (mix, like City Market's housemade mix)
2 cups stock, turkey
  salt (to taste)
  black pepper, ground (to taste)

Instructions

Preheat oven to 350 degrees F.  Butter a 9 by 11 inch baking dish and set aside. In a large skillet over medium heat, melt 6 tablespoons butter and add onions. Cook until almost translucent. Add sausage and cook until golden brown on all sides, about 6 minutes.  Add celery, leeks and apples to skillet. Season lightly with salt and pepper, then cook about 3 minutes. Add poultry seasoning, fresh herbs, and dried cranberries. Mix well and add cubed bread. Add the liquid, ½ cup at a time, stirring gently to combine. You may need to add a bit more stock depending on the bread that you use to achieve the desired consistency.

Arrange the stuffing in the baking dish, cut the remaining butter into small pieces and put on top of the dressing. Bake for 30 to 45 minutes. If the top starts to brown, cover with aluminum foil.
