A quick and easy chicken salad which is great on it's own or topped on a bed of greens.

2 pounds chicken breast (boneless & skinless)
  salt (to taste)
  pepper (to taste)
1 tablespoon dill, dried
1⁄2 cup celery (thinly sliced)
3⁄4 cup mayonnaise


Preheat oven to 350 degrees F. Lay chicken out on a lightly oiled sheet tray and season with dill, salt and pepper.

Bake for 25-30 minutes until the chicken reaches an internal temperature of 165 F. 

Set aside until cool enough to handle and then dice the chicken into small cubes. Combine all ingredients in a large bowl and serve. 


For a vegetarian spin, try substituting chickpeas for the chicken! Mash the chickpeas a bit first to get a flaky texture and then mix with the remaining ingredients.
