Preheat oven to 350 degrees F. Lay chicken out on a lightly oiled sheet tray and season with dill, salt and pepper.
Bake for 25-30 minutes until the chicken reaches an internal temperature of 165 F.
Set aside until cool enough to handle and then dice the chicken into small cubes. Combine all ingredients in a large bowl and serve.
For a vegetarian spin, try substituting chickpeas for the chicken! Mash the chickpeas a bit first to get a flaky texture and then mix with the remaining ingredients.
