Carrot Parsley Salad

  This is my stand-by potluck dish. Its the only salad recipe Ive ever found that really features an abundance of parsley.

  Ingredients
3 1⁄2 cups carrot
            
                                          1 bunch parsley, curly
            
                                          1 clove garlic
            
                                          3 tablespoons lemon juice
            
                                          1⁄4 cup vegetable oil
            
                                          1⁄2 teaspoon salt
            
                                          1 teaspoon cumin, ground
            
            Instructions
Toss all ingredients in salad bowl and serve.
