8 Servings

Ingredients

8 cups cauliflower (broken into florets)
2 tablespoons olive oil
  salt (to taste)
1 cup hot sauce (Frank's works well)
3 tablespoons butter (melted)
1 tablespoon lemon juice

Instructions

Preheat oven to 450F. Rinse cauliflower and break into bite sized florets.  Lay the pieces out evenly on a baking sheet. Drizzle with olive oil and toss until well and evenly coated. Sprinkle with salt. Roast for 20-25 minutes, until just tender.

Meanwhile, mix together melted butter, hot sauce, lemon juice, and salt. Remove cauliflower from oven. Pour sauce over the florets and toss until all pieces are evenly coated. Return to oven and cook for 5-7 minutes more, until the sauce bubbles and the cauliflower edges start to brown.

Serve with your favorite ranch or blue cheese dip.
