Boosted Tahini "Caesar" Dressing

Recipe adapted from The Minimalist Baker

A little hummus makes this dressing very creamy and the capers are a must for that sharp bite of a typical Caesar dressing. Great vegan option for topping salads or adding to wraps.

1⁄4 cup tahini
3 tablespoons hummus
1 teaspoon mustard, spicy
2 tablespoons lemon juice
1 tablespoon capers (plus 2 tsp brine)
2 tablespoons olive oil
3 cloves garlic (peeled)
  salt (to taste)
  pepper (to taste)
1 teaspoon maple syrup (if desired )


Combine all ingredients in a food processor. Adjust ingredients to suit taste.
