Boniatillo (White Sweet Potato Pudding)

Description

This Cuban dessert is more savory than sweet, but will leave you satisfied after a delicious meal!  This recipe was taught in one of our community classes as part of our Mosaic of Flavors series. 

Ingredients

2  
sweet potato (white)
2 tablespoons
honey
3 cloves
star anise
1/2 teaspoon
butter
   
cinnamon, ground
   
ginger, ground

Instructions

Skin and quarter potatoes. Boil until soft, about 10 minutes. Puree potatoes in food processor.

Boil 1 cup water, add 3 star anise cloves and simmer 5 minutes. Pour potatoes into a pan or skillet, warm on low heat and add honey to taste and butter. Add anise water to the potatoes and simmer for 2 minutes. Sprinkle with cinnamon and ginger.

Serve warm.
