This recipe was taught in one of our Mosaic of Flavors classes, which is presented in partnership with Vermont Refugee Resettlement Program.
Wash the skin before opening the plantains. Remove skin, pull off strings. Cut plantains into 2-3 pieces. Put water in the bottom of a steamer and place plantains on top. Sprinkle with salt. Bring to a boil and steam for 3-5 minutes. Serve with a meat or vegetable stew.
