Asian Spinach and Orange Salad

Adapted from Moosewood Restaurant Daily Specials

With the increasing availability of local spinach in the middle of the winter, this is a great salad recipe for citrus season.

Ingredients

6 cups spinach
3 orange
1 onion, red
2 tablespoons chives
2 tablespoons rice vinegar
3 tablespoons orange juice
1 tablespoon soy sauce
1 tablespoon ginger, ground
1 tablespoon orange zest
2 teaspoons sesame oil
1 pinch cayenne pepper

Instructions

Zest the oranges.

Wash and stem the spinach, tear into bite sized pieces, and place in a salad bowl and set aside.

Place the onion in a small bowl and sprinkle with a little rice vinegar and set aside to soften for 5 minutes.

Whisk together all the dressing ingredients (rice vinegar through cayenne pepper).

Toss the dressing with the spinach.

Serve the spinach, and top each serving sections of oranges, onions, and chives if desired.
