Apple Cinnamon Noodle Kugel

Kugel is a type of sweet or savory pudding made with noodles and baked like a casserole.

1⁄2 pound noodles, egg
1 cup cottage cheese
1 cup sour cream
4 tablespoons butter, unsalted
1⁄4 cup honey
1 egg
1 teaspoon vanilla extract
1⁄2 teaspoon cinnamon, ground
  pinch salt
1 apple
1⁄4 cup raisins, golden


Preheat oven to 350.

Boil the noodles until al dente (about 5 minutes) and drain.

Mix together remaining ingredients except for apple and raisins in a large mixing bowl, or in a blender if you want a smoother consistency. Combine drained noodles, cottage cheese mixture, apple and raisins and stir well.

Transfer to a buttered 13 inch baking dish, and bake for 40 minutes, uncovered. Cover with foil and bake an additional 20 minutes, or until cooked through.

Remove from oven and let cool before cutting into squares. Serve warm or at room temperature for brunch, tea, or as a dessert. Just before serving, sprinkle with a little extra cinnamon.
