Pratsch Gruner Veltliner (1L) x Maplebrook Farm Feta

Pratsch Gruner Veltliner is an organic white wine that is herbal, fresh, and spicy with notes of white pepper, apple, and citrus. Pair it with Maplebrook Farm Feta, which is briny, tangy and smooth in the mouth. The Pratsch's freshness and herbal notes compliment the feta for a nice, bright pairing.

Domaine Bousquet Sauvignon Blanc x Jasper Hill Farm Sherry Gray

This organic Sauvignon Blanc from Mendoza is bright and juicy, showing pomelo, tangerine and Asian pear flavors at the center, with passion fruit and subtle peppery accents underneath. It finishes clean and vibrant, with a trace of minerality. It works beautifully with Jasper Hill’s Sherry Gray, cutting through the creamy, buttery palate of this ash-ripened cheese.

Gulp Hablo Orange (1L) x von Trapp Farmstead Savage

This biodynamically farmed, skin-contact wine, is a blend of Verdejo and Sauvignon Blanc. It offers notes of tea & white flowers. Juicy, zippy and a bit of an herbaceous quality with a savory orange peel zing. We recommend partnering this up with The von Trapp Farmstead Savage, a gruyère-style cow's milk cheese with toothsome richness. The fine crystallization and warm umami flavors mimic the savory notes in the wine.

Mary Taylor Bordeaux Rouge x Plymouth Artisan Cheese Black Truffle Cheddar

The Mary Taylor is 50% Merlot with equal parts Cabernet Franc and Cabernet Sauvignon. It boasts dark-fruited complexity but rendered in a brighter, more refreshing frame. Match it up with the Plymouth Black Truffle Cheddar whose deep, earthy notes shine alongside the earthy and ethereal Bordeaux.

Rocks of Bawn Cabernet Sauvignon x Green Mountain Blue Cheese Boucher Blue

The Rocks of Bawn Cabernet is rugged and not for the faint of heart. Bright fruit, silky but firm tannins. A powerful and engaging wine that requires an equally powerful cheese. The Boucher Blue had no problem filling that role. It is sweet and salty, firm and fudgy, and riddled with deep green and blue veins that taste of white pepper, mushrooms, and chocolate.
