No bake time needed! For this recipe, you’ll use the stove top, but the cookies will set the fridge. Try adding 1 tsp cardamom for something extra special.
Heat dates, maple syrup, and eggs in a medium-size heavy-bottomed pot. Stirring frequently, heat until the mixture froths and bubbles and the color changes to a light gold. Immediately turn off the heat. Stir in vanilla, chopped nuts, and rice crispies. Allow to cool. Wet your hands and then shape into small ¾-1” balls. Roll in coconut. (You may have to rinse your hands partway through.) Chill in the refrigerator until ready to serve.
