Leftover Turkey Sandwich

Description

Looking for something to do with all those Thanksgiving leftovers? Try this awesome recipe for lunch on Friday. 

Ingredients

2 slices
bread (hearty, sliced thick)
2 ounces
turkey
2 tablespoons
gravy
1 tablespoon
cranberry sauce
   
onion (or shallot, slices)
   
mesclun (handful (or arugula and spinach) )
2 teaspoons
mustard, whole grain

Instructions

Slightly warm bread, but do not make it too toasty (you want it to absorb a lot of the wet ingredients.) Sauté onion or shallot in a little bit of olive oil. Warm turkey, gravy, and cranberry sauce. Once they are all warm, assemble sandwich by spreading mustard on bread and topping with cranberry sauce, onion, greens, and turkey. Drizzle on gravy and top with other slice of bread. Use more gravy for dipping, if desired.
