The Mosaic of Flavor cooking series is a collaboration between City Market and USCRI Vermont (US Committee for Refugees and Immigrants Vermont, formerly the Vermont Refugee Resettlement Program). For our May class, we will welcome Phub Lama and Htun Sein. They are co-owners of Nepali Kitchen in Essex Junction. They will teach us to make Gorkha Achar, a Nepalese salad, and Burmese Curry, an Indian-influenced dish that is an example of transnational and cross-cultural culinary pollination.
